3. Pouring the Custard Over the Caramel



Carefully strain the egg mixture through a fine mesh strainer to eliminate any unblended egg bits. This will ensure your pudding has a smooth and creamy texture. Slowly pour the strained custard into the ramekins over the caramel layer.

4. Baking the Pudding

Cover the ramekins securely with foil. Place them in a baking vessel and pour boiling water around the ramekins, making sure the water level reaches about halfway up the sides of the ramekins. This will create a water bath, which helps the pudding cook evenly and gently.

Bake in a preheated oven until the custard is set but still slightly jiggly in the center (about 45-60 minutes).

5. Setting and Serving

Once baked, allow the pudding to cool to room temperature. Then, refrigerate the ramekins for at least 3-4 hours or overnight to allow the pudding to set properly.
